I might have found the best eggs Benedict in Amsterdam
A perfectly poached egg on pillowy bread, crispy bacon sliced thin, and drowned in velvety hollandaise - that’s what eggs Benedict should be. Too often, I’m let down: not enough sauce, thick undercooked bacon or simply a lack of flavour. Not at Prins&Aap though. They have mastered the art of the perfect eggs Benedict - and that’s not the only thing that makes their brunch one of the best in Amsterdam.
Tucked inside the Andaz Hotel, with a view of the canals, this little gem is where Dutch tradition flirts with modern flair. Think: AI-generated art inspired by the Golden Age, a dedicated jenever table, and a mashup of colors, textures, and design choices that somehow come together effortlessly. It’s quirky, it’s curated, and it’s got just the right amount of chaos — like Amsterdam itself, really.
I’d been here before for cocktails (their menu is inspired by biodiversity and features things like vegetables), but I’d never tried their food. That changed one lazy Sunday, when I got to attend their special tulip brunch. I sank into one of their oversized armchairs, got handed a glass of champagne, and opened a menu that felt anything but standard. Sure, there’s avocado toast, but most dishes come with a twist: like the grilled cheese with Ibérico ham and Port Salut, or the pumpkin bacon roll with Madagascar vanilla gelato from Miuz. Yes - gelato for brunch. And yes, it feels slightly illegal, but in a good way.
But the standout for me, as the title of this post may have given away, was the eggs Benedict. Especially when paired with their celery spritz (a cocktail made with Grey Goose vodka, rhubarb, red apple, tonic, and celery from Lindenhoff farm) or their purple carrot Bloody Mary. At Prins&Aap, you get the feeling that ingredients aren’t just ingredients. They’re characters in the story. Often local, seasonal and always chosen with care. Their suppliers feel like partners, not afterthoughts, and that shows up in every bite.
Brunch in Amsterdam can feel repetitive - same smashed avo, same crowd, same photo with a mimosa. But Prins&Aap breaks the mould. It’s brunch with personality, substance, and soul. A little bit weird. A lot delicious.
